Rainbow Relish

Our home is at the literal end of the rainbow in this picture, taken by our neighbor across the street after a storm.

When we were kids we memorized the acronym ROYGBIV for red, orange, yellow, green, blue, indigo, and violet.

On that note, we transformed end of season peppers from the garden into a colorful Rainbow Relish, also inspired by our darling progeny, Finn.

This "Rainbow Relish" (aka candied jalapeño) was made by combining yellow Hungarian wax, red and green jalapeños, and sweet orange peppers. We were wondering if there might be such a thing as a tasty blue or violet hued peppers?
